Youngs Chip Shop Recipes – Fish Taco with Mango Salsa and Feta cheese

Do you ever find that you eat the same food in the same way all of the time? Well I was challenged by Youngs to come up with a new recipe for their Youngs Chip Shop Cod fillets. Having just come back from America where we visited the Bahamas I wanted something full of flavour with a bit of a zing so I opted for Fish Tacos with Mango Salsa and Feta Cheese.

Ok so it’s not really a Taco and more of a wrap but the concept is still the same. To make these you need the following ingredients.

  • 4 Youngs Chip Shop Cod Fillets
  • 4 Tortilla Wraps
  • Feta cheese
  • Iceberg Lettuce

Salsa Ingredients

  • 1 Mango
  • 1 Red Pepper
  • 1 Red onion
  • 1 Red Chilli (or more for heat)
  • Lime
  • Coriander

Place the Youngs Chip Shop Cod fillets in the oven according to the instructions on the packet. Finely chop all of the salsa ingredients in one bowl. Add Coriander to your taste. You can add additional chillis if you want more heat to your salsa or use a hot sauce of your choice when constructing your taco.

When the Youngs Chip Shop Fish is cooked, remove from the oven and chop. Construct your Taco as shown below.

  1. Place shredded lettuce on the tortilla
  2. Place chopped up Youngs Chip Shop Cod Fillet on top of the lettuce
  3. Spoon on the mango Salsa, add as much as you like.
  4. Sprinkle over some feta cheese
  5. Eat and enjoy!

The Fish Tacos tasted amazing and the combination of feta and mango goes perfectly with the crunchy batter and flaky fish. The Youngs Chip Shop Cod Fillets add lots of texture to the tacos thanks to its unique crisp, bubbly batter and the 100% succulent white cod fillet. At just 243 calories per fish fillet these make a tasty meal that fits in well with a balanced diet.
